Healthier Salad Dressings

Ingredients

Asian vinaigrette dressing

  • 2 tablespoons water
  • 2 tablespoons lemon or lime juice
  • 1 tablespoon Worcestershire sauce
  • Small amount of chopped fresh coriander
  • chilli (optional)
  • 1 teaspoon of sugar

Creamy Pasta Salad Dressing

  • ¼ cup mayonnaise
  • ¼ cup tomato sauce
  • ½ cup thick Greek Yoghurt
  • 1 tablespoon finely sliced red onion or 1 clove minced garlic
  • Herbs to taste
  • 1 tablespoon seeded mustard (optional)

Asian Peanut Dressing

  • 2 tablespoons peanut butter
  • 2 tablespoons vinegar or lemon juice
  • 1 tablespoon soy sauce or fish sauce
  • 3 teaspoons sweet chilli sauce
  • Small amount of boiling water
  • 1 teaspoon sesame oil (optional)
  • Extra chilli (optional)

Creamy dressing

  • ¼ cup mayonnaise
  • ½ cup thick Greek Yoghurt
  • 2 tablespoons finely chopped red onion or 1 clove garlic, minced
  • Herbs or mustard, to taste

Vinaigrette

  • 6 tablespoons olive oil
  • 3-5 tablespoons lemon juice, to taste
  • 2 clove garlic, minced
  • 1-2 teaspoons herbs or spices of choice like ground cumin
  • Pepper, to taste

Directions

  1. Combine all ingredients in a small container.
  2. A small amount of boiling water can be used if you need to adjust the thickness and strength of the sauce to taste.
