Savoury Breakfast Muffins

Ingredients (Serves 12)

  • 12 eggs
  • 2 tomatoes, diced
  • 1 zucchini, grated
  • 2 cups spinach, chopped
  • 6 spring onions, chopped
  • 100g low/reduced fat cheese, shredded or diced
  • 1-2 teaspoon of curry powder, or spice/s of choice

Directions

  1. Preheat oven to 200°C.
  2. Mix all ingredients together.
  3. Grease muffin trays and pour in muffin mixture.
  4. Bake for 15-20 minutes or until tops are firm.
  5. You can freeze these muffins for on the go breakfasts during the week.
