Ingredients (Serves 4)
- 4 potatoes with skin on
- Olive oil (optional)
- Heat oven to 200°C.
- Use a fork to prick holes on all sides of the potatoes.
- Cook in microwave for approximately 5 mins, turn and then for another 4 minutes until. Cooking time will vary but cook until they are only beginning to get soft.
- Cook in hot oven, 200°C, on a rack or in a baking dish greased with a little olive oil
- Toppings could include; cheese, Greek yoghurt and salad, bolognaise sauce, or for a Mexican touch add red kidney beans and cumin to the bolognaise sauce.
