Ingredients (Serves 4)
Dressing Option #1
- 6 tablespoons olive oil
- 3-5 tablespoons lemon juice, to taste
- 2 clove garlic, minced
- 1-2 teaspoons herbs or spices of choice like ground cumin
- Pepper, to taste
Dressing option #2
- ¼ cup mayonnaise
- ½ cup thick Greek Yoghurt
- 2 or more tablespoons lemon juice or apple cider vinegar, to taste
- 1 tablespoon finely chopped red onion or 1 clove minced garlic
Directions
- Combine sliced vegetables and parsley in a bowl
- Combine dressing ingredients by whisking in a small bowl or shaking together in a jar (with the lid on!)
- Pour dressing over vegetables and toss to combine
