Healthier Colesaw

Ingredients (Serves 4)

Dressing Option #1

  • 6 tablespoons olive oil
  • 3-5 tablespoons lemon juice, to taste
  • 2 clove garlic, minced
  • 1-2 teaspoons herbs or spices of choice like ground cumin
  • Pepper, to taste

Dressing option #2

  • ¼  cup mayonnaise
  • ½ cup thick Greek Yoghurt
  • 2 or more tablespoons lemon juice or apple cider vinegar, to taste
  • 1 tablespoon finely chopped red onion or 1 clove minced garlic

Directions

  1. Combine sliced vegetables and parsley in a bowl
  2. Combine dressing ingredients by whisking in a small bowl or shaking together in a jar (with the lid on!)
  3. Pour dressing over vegetables and toss to combine
