Ingredients (Serves 12)
- 12 eggs
- 2 tomatoes, diced
- 1 zucchini, grated
- 2 cups spinach, chopped
- 6 spring onions, chopped
- 100g low/reduced fat cheese, shredded or diced
- 1-2 teaspoon of curry powder, or spice/s of choice
Directions
- Preheat oven to 200°C.
- Mix all ingredients together.
- Grease muffin trays and pour in muffin mixture.
- Bake for 15-20 minutes or until tops are firm.
- You can freeze these muffins for on the go breakfasts during the week.
